Blueberry Coconut Pops

Summertime just got sweeter with our Blueberry Coconut Granola Pops! Our seasonal Coconut Cream Chewy Granola Bars are transformed into delicious, creamy popsicles. Mixed with fresh blueberries, coconut milk, honey and granola, this recipe will be a hit at summer pool parties, weekend BBQs or when you need a quick cool-off treat. Try them for an on- the-go breakfast on a hot summer morning, too!

Makes 8-10 Servings


Ingredients:

1 Carton Coconut Cream Chewy Granola Bars
1 Carton Coconut Milk or Almond Milk
1/2 Cup Honey
1/2 Teaspoon Vanilla Extract
Fresh Blueberries
Water


Supplies:
Blender
Saucepan
Popsicle Mold

Directions:

  1. Pulse in a blender, chewy granola bars until blended well. Set aside.
  2. In a saucepan, combine the blueberries, honey and water. Bring to a boil and then let simmer for 10 minutes until thick. Let stand for 10 minutes.
  3. Fill popsicle molds ¼ full and layer the coconut milk, granola and blueberry mixture until full. Insert popsicle sticks, freeze.
  4. After frozen solid, serve immediately.
