Pumpkin Bread Ingredients:
Pumpkin Spice Chewy Granola Bars
1 Cup All-Purpose Flour

1/2 Cup Granulated Sugar

1/4 Cup Packed Light Brown Sugar

1/2 Teaspoon Baking Soda

1 Teaspoon Baking Powder

1 Teaspoon Pumpkin Pie Spice

1/4 Teaspoon Salt

1 Egg

1/2 Cup Vegetable Oil

3/4 Cup Canned Pumpkin Puree (not pumpkin pie filling)


Optional Icing Drizzle Ingredients:
1 Cup Powdered Sugar

2-4 Tablespoons Milk or Heavy Cream

1/4 Teaspoon Vanilla Extract


Supplies:
8x5 Loaf Pan

Parchment Paper

Cooking Spray

Cooling Rack

Directions:

  1. Preheat oven to 350-degrees.
  2. In a medium bowl, place the flour, baking soda, baking powder, salt and pumpkin pie spice and whisk the dry ingredients to combine.
  3. Next add the sugars, egg, oil and pumpkin puree to a large bowl.
  4. Mix the wet ingredients with a spoon.
  5. Then, fold the dry ingredients into the wet ingredients until just combined.
  6. Spray a 8 ¾ x 5 ¼ “ loaf pan with cooking spray and line with parchment paper for easy removal and spread the batter in the pan.
  7. Now chop up 2 of the Sunbelt Baker Pumpkin Spice Chewy Granola Bars into small pieces. Crumble the pieces with your fingers and sprinkle on top of the batter.
  8. Bake 50 to 60 minutes or until a toothpick inserted in the middle of the bread comes out clean.
  9. To make the icing drizzle, mix together 1 cup powdered sugar and 2-4 TB milk or heavy cream and vanilla extract.
  10. Drizzle icing on top with a spoon or piping bag if desired.
