
Blueberry Coconut Granola Pops
Summertime just got sweeter with our Blueberry Coconut Granola Pops! Sunbelt® Bakery Coconut Cream Chewy Granola Bars* are transformed into delicious, creamy popsicles. Mixed with fresh blueberries, coconut milk, honey and granola, this recipe will be a hit at summer pool parties, weekend BBQs or when you need a quick cool-off treat. Try them for an on- the-go breakfast on a hot summer morning, too!
Ingredients:
1 carton Sunbelt® Bakery Coconut Cream Chewy Granola Bars
1 carton coconut milk or almond milk
½ cup honey
½ tsp vanilla
Fresh blueberries
Water
Supplies:
Blender
Saucepan
Popsicle mold
Directions:
- Pulse in a blender, chewy granola bars until blended well. Set aside.
- In a saucepan, combine the blueberries, honey and water. Bring to a boil and then let simmer for 10 minutes until thick. Let stand for 10 minutes.
- Fill popsicle molds ¼ full and layer the coconut milk, granola and blueberry mixture until full. Insert popsicle sticks, freeze.
- After frozen solid, serve immediately.
